An 18-piece set is six place settings of knife, fork and spoon — the standard for a family table. A 24-piece adds teaspoons or extends to eight settings. Gold and rose-gold finishes are popular for weddings and are electroplated over stainless steel, so the strength is the steel underneath; wash them by hand, because dishwasher detergent is abrasive enough to dull the plating over time. Plain stainless is the set to buy for everyday use and hard washing.
A large knife block looks impressive and mostly stores knives you will never pick up. Three do almost everything: a chef's knife of 20cm or so for chopping, a small paring knife for peeling and detail, and a serrated bread knife, which is also the right knife for tomatoes and pineapple. If you buy a set, buy it for those three being good rather than for the total count.
A sharp knife cuts where you aim it; a blunt one slides off the skin of a tomato and into your hand, which is why blunt knives cause more injuries than sharp ones. An electric sharpener restores an edge in a few passes and is the practical option for most kitchens. Whatever you use, keep knives out of the drawer where the edges knock against everything else — a block, a magnetic strip or even a blade guard roughly doubles the interval between sharpenings.
